From a disappointing coffee to a private roastery
The passion of Rosario Bonafede for coffee diversity, especially beans from India, Brazil, and Ethiopia, still shapes the roastery's range today. The idea to found a roastery began in 1998, when the coffee served in local ice cream parlors simply failed to meet his standards. Roasting turned out to be the real challenge: after installing a first machine in 2005 and experimenting in a garage the following year, it took six years, three machines, and a hand-built roasting drum before a fourth machine finally delivered the consistent quality needed to start real production.
